Foodie Friday: Broccoli Salad Recipe

Whether it’s the neighbor’s annual open house, the office lunch or a family holiday meal, December seems to be prime time for potluck.

If you’re tired of your old standby recipe, or just want something healthier, try this festive layered broccoli salad, developed by nutritionists at the Center for Weight Management at Gwinnett Medical Center. It’s not only delicious and nutritious, it looks wonderful, too!

Broccoli Layer Salad with Dried Cranberries
8 cups bite-sized broccoli florets
1 cup thinly sliced red onion
cup dried cranberries
cup freshly shredded sharp cheddar cheese
½ cup plain fat free yogurt
2 Tbsp. apple cider vinegar
2 Tbsp. honey
1 Tbsp. mayonnaise
2 Tbsp. salted sunflower seeded, roasted or toasted

In a large glass trifle or serving bowl, layer broccoli, onion, cranberries and cheese.

In a small bowl, whisk the yogurt, vinegar, honey and mayonnaise. Pour the dressing evenly over the salad.
