Foodie Friday: Weird Watermelon Recipes To Try

Nothing beats an icy cold slice of watermelon this time of year. But to change it up, try one of these unusual watermelon recipes:

Watermelon Agua Fresca

4 cups seedless watermelon, cut into 2-inch pieces
4 slices lime
½ - 1 cup cold water
Sugar or honey, to taste
Ice cubes for serving
Mint leaves (optional)

In a blender, combine half of the watermelon and half the cold water. Blend until smooth. Pour through a strainer into a pitcher and then discard solids. Repeat with the remaining watermelon and water. Mix in sugar to taste, no more than ½ cup total. To serve, put half a lime slice and a few mint leaves in a glass. Crush them a little with the back of a spoon. Then fill the glass with ice and pour in the agua fresca. Makes about 8 cups.

Grilled Watermelon

Watermelon wedges, sliced 1 ½ inch thick, leaving rind intact.
Olive oil

Lightly sprinkle both sides of each watermelon wedge with salt and let them drain on a rack for 20-30 minutes. Preheat the grill to high. Rinse each watermelon wedge under cold running water, then gently blot each side dry with paper towels. Brush each side lightly with olive oil and grill over high heat, approximately 3 minutes per side, until the melon is slightly softened and grill marks appear. Sprinkle with a little sea salt and fresh ground pepper to serve it as a standalone side dish.
(optional) For a grilled watermelon salad, chop the wedges into bite-sized pieces and toss with baby lettuces and a raspberry or balsamic vinaigrette. Crumble some feta cheese on top.

Watermelon Salsa

2-3 cups seeded and chopped watermelon
2 tablespoons chopped onion, preferably red onion
3 tablespoons seeded and chopped Anaheim chile (or 2 jalapeno peppers, seeded and minced)
1/3 cup chopped cilantro (optional)
1 cucumber, seeded and diced (optional)

Dressing: There are two options. For a balsamic dressing, mix together 2 tablespoons balsamic vinegar and ¼ teaspoon garlic salt. For the citrus option, mix together ¼ cup lime juice and ¼ teaspoon salt.


Combine the chopped ingredients. Mix together whichever dressing you prefer then pour it over the watermelon mixture and gently stir. Cover and refrigerate for at least one hour to blend flavors.
