Foodie Friday: Healthy Ice Cream Ideas
While ice cream, or even frozen yogurt, will never be a truly healthy food because of the high sugar content, there’s no better-tasting treat on a hot summer afternoon.
One way to make this treat healthier, is to pair your ice cream with one of summer’s delicious fruits.
It’s even better if you serve a large helping of fruit with a small topping of ice cream, instead of vice versa.
Here are some ideas to get you started:
- Dice ripe peaches and using a blender or food processor, quickly blend them into vanilla frozen yogurt. Return to the freezer to let harden a bit before serving.
- In a small saucepan combine blueberries (or blackberries) with a teaspoon or two of maple syrup. Warm over low heat until berries are slightly cooked. Cool before serving with ice cream or frozen yogurt.
- Dice strawberries and drizzle them with balsamic vinegar. Add a dollop of ice cream on top.
- Slice an apple in half, take out the core, and fill the depression with raisins and a dash of cinnamon. Wrap in foil and bake until soft. Let cool a little and serve the warm apple with cool ice cream/frozen yogurt on top.
