Foodie Friday: Fresh Sauces For Winter

By this time of the winter, we are longing for a breath of summer. One way to bring a touch of summer into your winter recipes, is by substituting fresh sauces for your usual cooked ones.

Whether it’s a topping for pasta, chicken, fish, pork, beef or tofu, these fresh takes will bring summer to the table.

Fresh Salsa

Select smaller tomatoes for the best wintertime flavor (cherry, grape, or other small types).

1 cup diced tomatoes
1-2 tablespoons diced onion
2 tablespoons chopped cilantro
½ - 1 jalapeño, finely diced (optional)
½ tablespoon olive oil
½ tablespoon red wine vinegar

Mix all ingredients. Taste and adjust vinegar, add a little salt, or add a tablespoon of your favorite jarred salsa.

Serve over eggs, chicken, fish or any Mexican dishes. This also makes a delicious, light salad dressing.
